Key Ingredients- 1 Green onion (approx. 6cm in length)
- 1 Egg
- 91g Beef (ground or thinly sliced for bulgogi)
- 120g Well-fermented kimchi
- 2 Servings cooked rice (warm)
- 1 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- A splash of water
Cooking Instructions
Step 1
First, chop the kimchi into bite-sized pieces or mince it finely. Preparing the kimchi beforehand makes cooking the fried rice much easier. For an extra touch, make a soft-boiled fried egg separately – it adds a wonderful richness to the kimchi fried rice. In a wide pan, add the chopped green onions and stir-fry over medium-low heat until fragrant to create fragrant green onion oil. Be careful not to burn the green onions; cooking them gently over low heat is key.
Step 2
Once the green onion aroma is released, add the beef and cook until it loses its pink color. When the beef is partially cooked, add the minced kimchi and stir-fry together. Avoid overcooking the kimchi, as it can become mushy; stir-frying it briefly will help maintain its crispiness. Now, add 1 tablespoon of gochujang and stir-fry until well combined with all the ingredients. It’s important to sauté until the gochujang’s savory flavor is infused into the ingredients.
Step 3
After stir-frying the gochujang and other ingredients, add just enough water to lightly cover the ingredients. Adding too much water can make the fried rice soggy, so be mindful of the quantity. Stir in 3 tablespoons of soy sauce and let it simmer until the kimchi softens. At this stage, taste and adjust the seasoning. If it has a slightly salty and sweet-sour flavor, it’s ready for making delicious fried rice. Continue simmering until the liquid is slightly reduced.
Step 4
Once the liquid has reduced somewhat, add the 2 servings of warm cooked rice. Using a spatula, gently break up any clumps of rice and mix thoroughly with all the ingredients until evenly combined. Stir-frying while mixing ensures the sauce coats every grain of rice. Finish by drizzling 1 tablespoon of sesame oil for a rich, nutty aroma. The final touch of sesame oil makes fried rice and bibimbap incredibly flavorful! Top with the prepared soft-boiled fried egg and enjoy your delicious kimchi fried rice.
