Main Ingredients

  • 100g Korean Green Peppers (Gwri-gocchu)
  • 1/2 Onion
  • A little Cooking Oil

Seasoning Ingredients

  • 3 Tbsp Soy Sauce
  • 0.7 Tbsp Minced Garlic (approx. 10g)
  • 1 Tbsp Fish Sauce (anchovy or tuna extract)
  • 0.5 Tbsp Sugar (adjust to taste)
  • 2 Tbsp Oligosaccharide or Corn Syrup
  • 1/2 cup Broth or Water (100ml)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, trim the stems off the Korean green peppers. If they are large, cut them in half to a bite-sized piece. Peel the potatoes and cut them into 2-3cm thick pieces. Slice the onion into strips. Preparing the ingredients in advance will make the cooking process much smoother.

Step 1

Step 2

Place the cut potatoes in a bowl of cold water for about 5 minutes to remove excess starch. This step helps prevent the potatoes from breaking apart during braising and maintains a cleaner texture. Drain them thoroughly.

Step 2

Step 3

Heat a little cooking oil in a wide pan or wok over medium heat and add the potatoes. Stir-fry until the potatoes are lightly coated and appear slightly translucent. Add 3 Tbsp of soy sauce and stir-fry together, allowing the sauce to coat the potatoes for about 1-2 minutes. Then, pour in 1/2 cup of broth or water and add 0.7 Tbsp of minced garlic. (Tip: If you have carrots, you can chop them and add them here for extra color and nutrition, but this is optional.)

Step 3

Step 4

Once the liquid begins to boil, add 1 Tbsp of fish sauce for an extra layer of umami. Next, add the prepared Korean green peppers and onion, along with 0.5 Tbsp of sugar. If you prefer a sweeter taste, feel free to increase the sugar slightly. Continue to simmer for 2-3 minutes until the onions become translucent.

Step 4

Step 5

When the potatoes are fork-tender and the sauce has reduced to a glaze, stir in 2 Tbsp of oligosaccharide or corn syrup for shine and a touch of sweetness. Turn off the heat, then add 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds. Mix everything gently to ensure the delicious sauce coats all the ingredients evenly.

Step 5

Step 6

Enjoy the delightful combination of crisp Korean green peppers and tender, fluffy potatoes! Your flavorful soy sauce braised potato dish, or stir-fry, is now ready. It’s also delicious served over hot rice as a donburi-style meal.

Step 6

Step 7

Unlike the typical red-sauce potato dishes, this soy sauce-based version highlights the natural flavors of the ingredients, offering a mild yet deep savory taste. If you omit the Korean green peppers, this makes an excellent, mild side dish that even children who dislike spicy food will enjoy.

Step 7

Step 8

This dish is perfect to make frequently when Korean green peppers and potatoes are in season. It’s an excellent summer side dish and a hearty home-style meal option that appeals to all ages.

Step 8

Step 9

The vibrant green color of the fresh Korean green peppers not only looks appealing but also stimulates the appetite. Potato dishes, which offer both great taste and health benefits, are always welcome additions to any meal and add richness to your dining table. Be sure to give it a try!
