A delightful beef stir-fry elevated with the refreshing crunch of fresh lettuce. This recipe adds a wonderful textural contrast, making it a satisfying and flavorful meal.
Main Ingredients
- 200g Beef (thinly sliced for stir-fry or bulgogi)
- 2 large Lettuce leaves (about 100g)
- 1/2 Onion
- 1 package Enoki mushrooms (about 100g)
- 2 bowls Cooked rice, warm

- 2 Tbsp Mirin (or rice wine)
- 1 Tbsp Soy sauce
- 1 tsp Sesame oil

Cooking Instructions
Step 1
First, prepare your vegetables. Peel the onion and slice it thinly into strips. Trim the base of the enoki mushrooms and then cut them in half lengthwise. Slice the beef into bite-sized pieces, about 3-4 cm long. Gently pat dry any excess moisture with a paper towel for a better sear.
Step 2
Heat the cooking oil in a pan over medium-low heat. Add the sliced onion and stir-fry until it becomes translucent and fragrant. Cooking the onion until soft and sweet is key to bringing out its natural sweetness.

Once the onion is partially cooked, add the prepared beef to the pan. Increase the heat to medium-high and stir-fry quickly until the beef is no longer pink on the surface. Be careful not to overcook, as this can make the beef tough.

When the beef is almost cooked through, add the enoki mushrooms. Stir-fry them gently just until they wilt slightly. This will help them retain their pleasant crispness.

Now it’s time to season. Pour in the mirin, soy sauce, and sesame oil. Sprinkle in a pinch of black pepper and salt. Stir everything together and continue to cook for another 1-2 minutes, ensuring the sauce coats all the ingredients evenly. Your delicious beef stir-fry is now ready!

Wash the lettuce leaves thoroughly and then chop them into roughly 1cm wide strips. Place the warm cooked rice into a serving bowl. Generously arrange the chopped lettuce on top of the rice. The residual heat from the rice will slightly soften the lettuce, making it easier to eat.
