Ingredients- 1 Lotus root (medium size)
- A small amount of leftover pork patty mixture (Tofu pork patty mixture)
- 1 Red chili pepper

Cooking Instructions
Step 1
Prepare one medium lotus root by thoroughly washing and peeling it. Slice it into rounds about 0.5 cm thick, avoiding slices that are too thin. Briefly soak the sliced lotus root in water to remove excess starch, then drain it well. This step ensures the pancakes fry up nicely.
Step 2
Take the prepared lotus root slices and spread a portion of the leftover pork patty mixture evenly onto one side of each slice. Use a spoon or your fingers to press the mixture firmly, filling any holes in the lotus root and ensuring it adheres well. It’s important to press the mixture on so it sticks securely.
Step 3
For this step, apply the pork patty mixture only to one side of the lotus root. Leave the other side plain so that the lotus root’s crispiness is preserved when it cooks.

Crack 1-2 eggs into a bowl and whisk them well to create an egg wash. Finely chop the red chili pepper into thin, round slices for garnish. Removing the seeds beforehand will make them easier to handle.

Dip the lotus root slices (with the mixture-coated side) into the prepared egg wash, ensuring both sides are evenly coated. Heat a non-stick pan over medium-low heat with a generous amount of sunflower oil. Place the egg-coated lotus root into the hot oil. Once the mixture side begins to cook, gently press the thinly sliced red chili peppers onto the cooked surface. This helps the chili peppers stick and adds color and flavor. Pan-fry until both sides are golden brown and cooked through. This completes the dish.
