Inspired by the delicious ‘Sekai no Yamachan’ tebasaki I enjoyed in Nagoya, I’ve recreated a similar dish at home! This recipe is a personal adaptation based on insights from a Japanese YouTuber. Thoroughly pat the washed chicken wings dry with paper towels. For this Nagoya-style preparation, it’s key not to add any pre-seasoning or coat the wings with starch or flour. Frying them as-is will result in a wonderfully crispy skin.

While the chicken wings are frying, prepare the special sauce. In a bowl, combine soy sauce, sugar, mirin, minced garlic, and toasted sesame seeds. Mix well until the sugar is dissolved. If you don’t have mirin, you can substitute it with cooking sake or regular sake. Feel free to adjust the amount of sugar and soy sauce to suit your personal preference for sweetness and saltiness.

Once the chicken wings are golden brown and crispy, remove them from the oil and drain excess grease. Place two chopsticks side-by-side on a plate or bowl, and rest the fried chicken wings on top of the chopsticks. This technique allows the excess oil to drip away from the bottom, resulting in a cleaner, less greasy finish.

With the excess oil drained, generously brush the special sauce over the chicken wings. You can use a pastry brush or a spoon to ensure an even coating. It’s important for the sauce to coat the wings thoroughly.

Finally, sprinkle a little salt and pepper over the sauced chicken wings to complete the dish! However, I personally skipped the salt in this step. Since the sauce already contains soy sauce, those who prefer less salt will find it delicious without adding extra salt. You can adjust the saltiness according to your own taste.
