Using a mandoline slicer or a sharp knife, shred the cabbage as thinly as possible. Thinner shreds result in a more tender texture. Soak the shredded cabbage in cold water for about 30 minutes to enhance its crispness.

Thinly slice the onion into shreds, similar to the cabbage. Soak the sliced onions separately in cold water to mellow out their sharp flavor.

Drain the water from both the cabbage and onions thoroughly using a colander. It’s crucial to remove excess water, as any remaining moisture can make the dressing too thin.
