Main Ingredients- 150g small dried anchovies (for stir-frying)
- 50g sliced almonds
- 1 Korean green chili pepper (cheongyang pepper)
- 1 red chili pepper
- 2 Tbsp leek oil (from white part of leek)
- 1 Tbsp cooking wine (to remove fishiness)
- 1 Tbsp sesame oil (for nutty aroma)
- A pinch of toasted sesame seeds (for garnish)
Sauce- 1 Tbsp soy sauce
- 2 Tbsp plum extract (for sweetness and gloss)
- 2 Tbsp cooking wine (for flavor)

Cooking Instructions
Step 1
First, remove the stems from the Korean green chili pepper and red chili pepper. Gently shake out the seeds, then thinly julienne them. The chili peppers will add a hint of spice and vibrant color, enriching the overall flavor of the stir-fry.
Step 2
Heat a pan over medium-low heat and add 2 tablespoons of leek oil. Add the dried anchovies for stir-frying and sauté for about 1-2 minutes until they become slightly crispy and their fishy aroma dissipates. Be careful not to burn them. Adding 1 tablespoon of cooking wine at this stage further eliminates any lingering fishiness and enhances the flavor.
Step 3
Once the anchovies are lightly fried, add the sliced almonds to the pan. Continue to stir-fry them together with the anchovies for about 1 more minute, until both ingredients turn a light golden brown. Keep an eye on the heat to prevent the almonds from burning.
Step 4
Push the fried anchovies and almonds to one side of the pan. In the empty space, combine 1 tablespoon of soy sauce, 2 tablespoons of plum extract, 2 tablespoons of cooking wine, and 1 tablespoon of oligosaccharide. Bring the sauce to a simmer. Once the sauce is bubbling, mix the anchovies and almonds into the sauce, stirring well to coat everything evenly. Continue to stir-fry for another 1-2 minutes until the sauce thickens slightly and clings to the ingredients. Finally, add the julienned chili peppers and stir-fry briefly over high heat for just about 30 seconds. Turn off the heat, then drizzle in 1 tablespoon of sesame oil and sprinkle with toasted sesame seeds. Mix everything together. Your delicious Almond Anchovy Stir-fry is ready!
