  • 50g mozzarella cheese
  • 1 Tbsp all-purpose flour
  • 3-4 Tbsp cornstarch (for extra crispiness)

Cooking Instructions

Carefully prepare the shrimp by deveining them and removing any unwanted parts. Insert a toothpick into the second segment of the shrimp to gently extract the dark vein. Remove the head and shell, leaving the tail intact. Trim the fluid sac at the base of the tail to ensure a neat shape when fried.

Slice the mozzarella cheese into thin sticks. These will be inserted into the shrimp. Aim for slices that are not too thick, so they fit comfortably inside the shrimp and melt beautifully when fried.

Make a deep incision along the belly side of the prepared shrimp. This technique helps the shrimp lay flat and makes it easier to insert the cheese. Season the inside of the incision lightly with salt and pepper. Carefully stuff the mozzarella cheese sticks into the slits you made in the shrimp.

Now, it’s time to coat the stuffed shrimp. First, dredge each shrimp evenly in a mixture of cornstarch (3-4 Tbsp) and all-purpose flour (1 Tbsp). Next, dip them into the whisked egg wash, ensuring they are fully coated. Finally, press the shrimp firmly into the panko breadcrumbs, making sure to cover them generously for maximum crispiness.
