Main Ingredients- Whole pork belly (for boiling) 600g

- Vegetables for roasting (e.g., onion, mushrooms, bell peppers) as desired

Cooking Instructions
Step 1
First, it’s important to remove excess moisture from the pork belly. Use paper towels to firmly press and pat dry any blood or moisture from the surface of the pork belly. Properly draining the liquid helps ensure a clean taste without any gamey odor.

Now, it’s time to score the pork belly. Make diamond-shaped cuts on the skin side. For the meat side, create straight cuts about 1 to 1.5 cm deep. This scoring allows heat to penetrate evenly, ensuring the meat cooks uniformly and improves the texture.

Drizzle olive oil over the scored pork belly and spread it evenly. Sprinkle salt and black pepper over the top, then rub gently with your hands to ensure the seasoning is well distributed. The olive oil helps create a wonderfully crispy skin.

Tuck bay leaves into the slits made in the meat part of the pork belly. Bay leaves are excellent for removing any unwanted odors and imparting a subtle aroma, enhancing the overall flavor. Once prepared, let it rest in the refrigerator for about 10-15 minutes to marinate.

While the pork belly is marinating, prepare your chosen vegetables for roasting. Cut onions into thick wedges, trim the stems off mushrooms, and remove the seeds from bell peppers before cutting them into large pieces. Feel free to add other vegetables like potatoes or carrots according to your preference.

Place the seasoned whole pork belly in the air fryer basket with the skin-side up. Air fry at 180°C (350°F) for 15 minutes. Cooking the skin side first helps to seal in the juices.
