  • 1/2 cup all-purpose flour or Korean pancake mix (using a paper cup)
  • 3 Tbsp coarse salt
  • 500ml water
  • 2 Tbsp vinegar
  • Cooking oil, as needed

In a large bowl, combine 500ml of water with 3 tablespoons of coarse salt and 2 tablespoons of vinegar. Stir until the salt and vinegar are fully dissolved. This saltwater brine is crucial for removing any fishy odor and firming up the fish’s flesh, which prevents it from breaking apart during cooking.
