How to Make Delicious Mackerel Patties at Home (No Fishy Smell!)

Main Ingredients- Boneless Mackerel Fillet 158g (approx. 1/2 fish)
- Onion 58g (1/2 medium)
- Green Onion 24g (1/3 stalk)
- Korean Green Chili Pepper 1/2
- Pancake Mix (heaping) 2 Tbsp (rice spoon)
- A bit of Green Onion for removing odor
- 6 Whole Peppercorns

- A pinch of Salt

Cooking Instructions
Step 1
We’ll start by using frozen boneless mackerel fillets. First, cut the mackerel in half. Place the mackerel in a pot and add enough water to cover it. To help remove any fishy smell, add a small piece of green onion and about 6 whole peppercorns. Cook over medium heat until the green onion is completely softened and the mackerel is thoroughly cooked.
Step 2
While the mackerel is simmering, let’s prepare the vegetables for the patties. Finely mince the green onion, onion, and Korean green chili pepper. Mincing them finely will help them mix well with the mackerel and improve the texture.
Step 3
Once the mackerel is fully cooked, drain it on a sieve and let it cool slightly. Once it’s cool enough to handle, carefully remove all the bones and skin. We only want to use the flesh, so make sure to discard everything else. Place the deboned mackerel flesh in a bowl and mash it finely using a fork or a mashing tool.

Add all the finely minced onion, green onion, and Korean green chili pepper to the mashed mackerel. Season with a pinch of salt and black pepper, then mix everything together thoroughly until well combined.

Now, let’s add the pancake mix to bind the mixture. Use about 2 heaping tablespoons, measured with a rice spoon. If the mixture feels too wet and difficult to shape, you can gradually add more pancake mix to adjust the consistency. Be careful not to add too much, as it might make the patties dry.

Mix the ingredients well, kneading them as if you’re developing dough. Mixing until the mixture becomes slightly sticky will help the patties hold their shape when cooking.

Scoop out portions of the mixture using a rice spoon and shape them into small, flat patties with your hands. Making them bite-sized is great, especially for children.

Heat a pan with a generous amount of cooking oil over medium-low heat. Place the shaped mackerel patties in the hot pan. Fry them, flipping occasionally, until they are golden brown and crispy on both sides. Since the mackerel is already cooked, focus on getting a nice crispy exterior rather than overcooking the inside.
