On a busy Sunday morning, my husband suddenly craved something to eat. To satisfy his hunger without sacrificing my precious time to prepare for church, I quickly whipped up these ‘Pan-Fried Rice Balls’. It’s a delightful dish made with freshly cooked rice, a savory and spicy gochujang pork filling, shaped into balls, and then pan-fried until golden brown and slightly crispy on the outside, yet moist and tender on the inside. Perfect for breakfast, a light brunch, or even a snack for kids! This recipe ensures you’ll have ample time for a quick pre-church pamper.

First, cook fluffy white rice using an electric pressure cooker. While the rice is cooking, finely chop the 600g of pork tenderloin into bite-sized pieces. Place the chopped pork in a bowl, add 2 Tbsp of sugar and 2 Tbsp of soy sauce, and mix well to marinate.

Next, add 4 Tbsp of gochujang (Korean chili paste) generously over the marinated pork.

Add 1 Tbsp of minced garlic. Gently massage the ingredients with your hands to ensure the seasoning coats the pork thoroughly. Once mixed, heat a pan over high heat with a little vegetable oil and begin stir-frying.

Finely dice the 2 onions. Prepare a pinch of black pepper to add while stir-frying the pork.

Once the pork is partially cooked over high heat, add the diced onions and black pepper, continuing to stir-fry. To effectively remove any gamey smell from the pork, add 2 Tbsp of cooking wine (or mirin) and stir-fry. The cooking wine helps tenderize the meat and enhances its flavor.
