Crispy Pan-Fried Injeolmi: A Nostalgic Snack for Kids!
Easy Homemade Injeolmi Gui – Crispy Outside, Chewy Inside!
Make the perfect kids’ snack, Injeolmi Gui, using ingredients you already have at home. This recipe offers a delightful texture and a hint of cinnamon sweetness.
Ingredients- 1 pack Injeolmi (Korean rice cake)
- 1 Tbsp perilla oil
- 1 tsp cinnamon sugar (mix of ground cinnamon and sugar)
Cooking Instructions
Step 1
We bought this Injeolmi from the market for my daughters who absolutely love rice cakes! While it’s delicious on its own, the memory of my grandmother toasting Injeolmi brings back such a wonderful feeling. I’m using cinnamon sugar today, but you can simply mix ground cinnamon with regular sugar if you don’t have it. The combination of cinnamon and Injeolmi is truly magical!
Step 2
Next, place the Injeolmi pieces into a pan or gratin dish heated over low heat. I’m using a triple-ply stainless steel gratin dish because it distributes heat evenly and prevents burning. Arrange the Injeolmi pieces so they don’t overlap, ensuring each piece gets nicely toasted.
Step 3
Drizzle about two rounds of perilla oil over the Injeolmi. This nutty oil adds a wonderful depth of flavor that complements the chewy texture of the rice cakes perfectly.
Step 4
It’s crucial to cook this over ‘low heat’. High heat will burn the outside before the inside is properly heated through. Patience is key here; let it toast slowly until it’s golden brown.
Step 5
Gently press a piece of Injeolmi with your chopstick. If it yields softly, it means it’s cooking nicely. The aroma of the perilla oil and the toasting Injeolmi will fill your kitchen and make your mouth water!
Step 6
Cook for about 5 minutes over low heat. You’ll notice the outside becoming slightly crispy while the inside remains delightfully chewy. Once it’s almost done, sprinkle the cinnamon sugar evenly over the Injeolmi and continue to toast for another minute. The sugar will melt, adding a sweet and fragrant finish.
Step 7
And there you have it – delicious, chewy, and slightly crispy Injeolmi Gui! I’ll be sharing the recipe for the creamy and sweet potato and sweet potato gratin very soon, so stay tuned! This snack pairs wonderfully with a warm cup of tea or milk.
