Score the top and sides of the tofu by making diamond-shaped cuts with a knife, being careful not to cut all the way through to the bottom. Aim to cut about one-third to two-thirds of the way down the tofu. This scoring allows the myeongran to be inserted evenly and helps the flavors penetrate deeply.
