  • 1/2 bag Bean Sprouts (approx. 100g)
  • 1 handful Oyster Mushrooms
  • 1 Shiitake Mushroom
  • 1/4 Onion
  • 1/3 Carrot
  • 2 Tbsp Cornstarch
  • 0.5 Tbsp Curry Powder
  • 1/2 Red Chili (for garnish)
  • A little Chives

Seasoning Ingredients (Measurement: Tablespoons)

  • 1 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Minced Garlic
  • 1/2 Scallion
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare all the ingredients needed for the dish. You can also make a great meal by utilizing any leftover vegetables you have at home. Feel free to use up whatever is in your refrigerator!

Step 1

Step 2

Wash the prepared vegetables (oyster mushrooms, shiitake mushroom, onion, carrot) thoroughly under running water. Then, thinly julienne them into bite-sized pieces and set aside.

Step 2

Step 3

For the tofu (1 block, approx. 300g), either blanch it briefly in boiling water to remove excess water or press it with paper towels to thoroughly drain any moisture. Once drained, cut it into bite-sized cubes, about 2-3 cm. Lightly season the cubed tofu with a pinch of salt and pepper.

Step 3

Step 4

Place all the drained tofu cubes into a large resealable bag. Add 2 tablespoons of cornstarch and 0.5 tablespoon of curry powder. Gently shake the bag or carefully mix with a spatula to evenly coat the tofu with the starch and curry powder. Be careful not to break the tofu pieces.

Step 4

Step 5

Heat a generous amount of cooking oil in a skillet over medium-low heat. Add the coated tofu and pan-fry until golden brown and crispy on both sides. Ensure all sides are beautifully browned for the best texture.

Step 5

Step 6

Remove the crispy tofu from the pan and set aside. In the same skillet, add half a bag of bean sprouts and all the julienned vegetables. Stir-fry them quickly over high heat.

Step 6

Step 7

Now it’s time to add the delicious seasonings. Finely chop the scallion (1/2) and add it to the pan with the vegetables. Stir-fry until fragrant, then add 1 tablespoon of minced garlic and cook until the garlic aroma is released.

Step 7

Step 8

Pour 1 tablespoon of soy sauce along the edge of the pan. This helps it caramelize slightly, adding a deeper flavor.

Step 8

Step 9

Add 1 tablespoon of oyster sauce to enhance the umami. The combination of soy sauce and oyster sauce creates a perfect sweet and savory balance.

Step 9

Step 10

Finally, drizzle in 1 tablespoon of sesame oil for its nutty aroma. Gently toss everything together to combine the flavors.

Step 10

Step 11

In the final step, add the pre-cut chives and red chili. Stir-fry briefly. The vibrant colors will make the dish visually appealing.

Step 11

Step 12

For those who enjoy a little heat, you can crush and add a small amount of dried bird’s eye chili. This will infuse the bean sprouts with a subtle spiciness that enhances the overall flavor. If you prefer milder dishes or are cooking for children, you can omit this step. I set aside a portion for my kids before adding the chili to the adult serving.

Step 12

Step 13

The finished dish offers a delightful contrast: a crispy, golden exterior and a chewy interior for the tofu, paired with the refreshing crunch of the bean sprouts. It’s reminiscent of enjoying crispy sweet and sour pork! The savory and slightly spicy notes make it an excellent side dish for rice.

Step 13

Step 14

This recipe is easy to prepare, making it perfect for everyday side dishes, and it’s elegant enough to serve when entertaining guests. With its low calorie count, I highly recommend it as part of a healthy diet!
