Crispy Pork Belly: Air Fryer Samgyeopsal with Scored Thick Cut
The Ultimate ‘Crispy Outside, Tender Inside’ Samgyeopsal! Air-Fried Scored Pork Belly That You’ll Never Forget
I was scrolling through YouTube and saw ‘Yuk*man’s’ Super Crispy Pork Belly recipe, and I just couldn’t resist! The visuals were incredible, especially the crispy fatty bits and the chewy texture, not to mention the ASMR. I decided to try this super simple yet perfect recipe myself.
Ingredients
- Whole Pork Belly (scored) 400g
- Leeks 3-4 stalks
- Herb Salt (to taste)
- Cooking Oil (optional, can be omitted)
Cooking Instructions
Step 1
This recipe focuses on cooking whole pork belly using an air fryer. I used pre-scored pork belly, but if yours isn’t scored, make deep, even scores across the surface of the meat. This helps the fat render beautifully and allows seasonings to penetrate.
Step 2
Don’t be shy with the scoring! Even though it might seem quite thick, the meat shrinks when cooked, so these deep cuts are ideal for achieving the perfect texture. Make them deep and substantial, like a work of art.
Step 3
Prepare a deep, air-fryer-safe pan or dish. Lay down a generous layer of chopped leeks at the bottom. The leeks will help absorb any unpleasant odors from the pork and add a subtle aroma. They also act as a buffer, preventing the pork belly from directly contacting the pan and burning.
Step 4
Now, let’s season the pork belly. Generously sprinkle herb salt on all three sides of the meat, avoiding the thick fat cap. Using herb salt is a convenient way to add a lot of flavor without a complex marinade, saving you time.
Step 5
Place the seasoned pork belly on top of the leeks. For the thick fatty side, we’ll just sprinkle a little salt to enhance its natural richness. Position the pork belly so the fat cap is facing upwards.
Step 6
Place the pork belly in the air fryer (no preheating needed) and set it to 120°C (250°F) for 2 hours. This low-and-slow cooking method is key to making the pork incredibly tender and juicy. It takes time, but the result is well worth the wait.
Step 7
After one hour, check on the pork belly. It might still look a bit undercooked. Don’t worry! Continue to air fry it for the remaining hour at the same temperature of 120°C (250°F). Patience is key here.
Step 8
After a total of 2 hours in the air fryer, your pork belly will be cooked through. However, we’re not done yet! The final pan-frying step is crucial for achieving that signature ‘crispy outside, tender inside’ texture.
Step 9
Thanks to the low-temperature air frying, the rendered pork fat will be clear and clean. Pour all of this delicious fat into a frying pan. You’ll need enough fat for the pork belly’s fatty side to be partially submerged. Place the pork belly into the pan with the fatty side down first.
Step 10
To prevent oil splatters and ensure even crisping, place the pork belly into the pan *before* the oil heats up. Then, cook over low heat for about 10 minutes. Starting with a cold pan and low heat allows the fat to render slowly and the exterior to crisp up without burning or excessive splattering.
Step 11
Behold, the masterpiece! The finished whole pork belly is a sight to behold. Notice how the fatty edges have beautifully puffed up, resembling delicate flower petals. The visual appeal is truly stunning.
Step 12
Take a bite and listen! You’ll hear the satisfying ‘crunch’ – pure ASMR. The crispy, rendered fat offers a delightful chew, while the tender meat melts in your mouth. This is truly an unforgettable, ‘life-changing’ pork belly experience. You absolutely must try it!
