Main Ingredients
  • 500g thinly sliced pork belly
  • 2 handfuls of shredded cabbage
  • 3 green onions

Cooking Instructions

Step 1

First, prepare the vegetables. Thinly slice the green onions diagonally. Rinse the shredded cabbage thoroughly and soak it in cold water for about 5 minutes to make it crisp. After soaking, drain the water thoroughly using a salad spinner or by patting it dry with paper towels to remove as much moisture as possible.

Step 2

Next, prepare the pork belly. Place the 500g of thinly sliced pork belly in a frying pan over medium heat and cook until golden brown and the excess fat has rendered out. Cooking it beforehand makes the pork belly more tender and allows it to better absorb the flavors of the dressing.

Step 3

Prepare the garlic for sautéing. Thinly slice the 10 cloves of garlic and set them aside.

Step 4

Return the drained pork belly to the frying pan. Add the sliced garlic and sauté over medium heat until both the pork and garlic are golden brown and fragrant. Be careful not to burn the garlic, and stir to ensure even cooking.

Step 5

In a large bowl, combine the drained cabbage and green onions. Add the 2 Tbsp of gochugaru first and gently toss to coat the vegetables with the chili flakes. This initial step helps the color distribute evenly.

Step 6

Now, add all the remaining seasoning ingredients and mix well. Add 2 Tbsp soy sauce, 2 Tbsp vinegar, 1 Tbsp plum extract, 1/2 Tbsp corn syrup, 1 Tbsp sesame oil, 1 Tbsp minced garlic, and 1 Tbsp toasted sesame seeds. Gently toss everything together, being careful not to mash the vegetables. Mix until the tangy and sweet flavors are well combined.

Step 7

Serve the dressed vegetables on a plate alongside the warm, cooked pork belly. For an extra touch, you can add the cooked pork belly to the pan with the dressed vegetables and sauté briefly for a warm salad. Enjoy this delightful meal!
