  • 1 cup well-fermented kimchi (paper cup measurement)
  • 1/2 cup kimchi brine (paper cup measurement)
  • 1/2 cup water (paper cup measurement)
  • 1-2 eggs

Cooking Instructions

First, prepare one store-bought pork cutlet. Heat a generous amount of oil in a frying pan and fry the cutlet until golden brown and crispy on both sides. Once fried, let it cool slightly before cutting it into bite-sized pieces. Cutting them into about 3-4 cm pieces is recommended to maintain a satisfying texture.

In an earthenware pot (ttukbaegi), add a little cooking oil. Sauté the chopped green onions and sliced onions over medium-low heat until fragrant. Cooking the onions until they become translucent will deepen the flavor of the stew.

Add the finely chopped kimchi and stir-fry it with the onions and green onions. It’s important to sauté the kimchi until it softens and its sourness mellows. Then, pour in about half a paper cup of kimchi brine to enhance the kimchi flavor.

Now, add all the seasoning ingredients and bring to a boil. Add 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1.5-2 Tbsp soup soy sauce, 1-1.5 Tbsp sugar, and 1 Tbsp mirin. Adjust the sugar amount based on how sour your kimchi is. Pour in half a paper cup of water and let it simmer until all ingredients are well combined. Once the stew comes to a boil, reduce the heat to medium and let it simmer for about 5 more minutes to develop the flavors.

When the stew has thickened slightly, arrange the bite-sized pork cutlet pieces on top of the kimchi stew in the earthenware pot. To prevent the cutlet from becoming too soggy, it’s best to add it towards the end of the cooking process.
