  • 2 medium potatoes
  • 1 Tbsp frying powder (tempura flour)
  • 1 Tbsp cornstarch
  • Pinch of salt (adjust to taste)
  • Cooking oil (generous amount)

First, wash the two potatoes thoroughly and peel them. Then, using a knife or a julienne peeler, cut the potatoes into very thin, fine strips. Thinly sliced potatoes will result in a crispier pancake.

Add a pinch of salt to the julienned potatoes and gently mix them together. Let them sit for about 5 minutes. This process helps draw out excess moisture, contributing to a crispier texture, and seasons the potatoes for better flavor.

After 5 minutes, lightly drain any water that has come out of the potatoes. Add 1 tablespoon of frying powder and 1 tablespoon of cornstarch. Mix well until the powder evenly coats the potato strips, forming a batter. If the batter seems too wet, you can add a little more frying powder or cornstarch.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, pour the prepared potato batter into the pan. Use a spoon or spatula to spread the batter thinly and evenly into a round shape. Spreading it thinly ensures even cooking and crispiness.

Maintain medium heat and cook until the potato is golden brown on the bottom, then carefully flip it over. Cook the other side for another 3-4 minutes, or until it’s also a golden brown color.
