Golden Ratio Sauce- Gochujang (Korean chili paste) 5 Tbsp
- Maesilcheong (plum extract) 3 Tbsp (or corn syrup/sugar)
- Corn syrup (for sweetness adjustment) 1 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds (or whole sesame seeds) a pinch
- Gochujang (Korean chili paste) 5 Tbsp
- Maesilcheong (plum extract) 3 Tbsp (or corn syrup/sugar)
- Corn syrup (for sweetness adjustment) 1 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds (or whole sesame seeds) a pinch
Cooking Instructions
Step 1
First, let’s make the sauce, which is the heart of delicious bibim guksu. In a bowl, combine 5 Tbsp of gochujang, 3 Tbsp of maesilcheong, and 1 Tbsp of corn syrup. Mix well until the sugar dissolves. Finally, stir in 1 Tbsp of sesame oil to enhance its nutty aroma. Your flavorful sauce is now ready.
Step 2
Cook the somyeon noodles in boiling water, adding cold water about 2-3 times as they boil. This step makes the noodles chewier and more elastic. You can tell they’re done when you lift them with chopsticks and no white core is visible.
Step 3
Once cooked, drain the noodles in a colander and immediately rinse them under cold running water. Rinsing with cold water cools down the noodles, removes excess starch, and prevents them from sticking together, maintaining their firm texture.
Step 4
Place the thoroughly drained, firm noodles into a mixing bowl. Generously pour the prepared sauce over them. It’s important that the sauce coats the noodles evenly. Use chopsticks, a ladle, or tongs to gently loosen the noodles and mix them with the sauce carefully.
Step 5
Transfer the well-mixed noodles to a serving bowl. Top generously with the crunchy radish kimchi and a halved hard-boiled egg. Finally, sprinkle with toasted sesame seeds for a mouthwatering finish! For extra freshness and texture, feel free to add shredded cucumber or lettuce.
