Whip up this delightful kimchi fried rice using leftover aged radish kimchi! It’s the perfect dish for when you’re craving something flavorful and satisfying. The crunchy texture of the kimchi combined with the savory-sweet sauce will make you finish a bowl of rice in no time!
Kimchi Fried Rice Ingredients- 1 bowl cooked rice
- 1/2 bowl aged radish kimchi (kkakdugi)
- 1/3 stalk green onion
- 1 egg
- 3 Tbsp water
- A little cooking oil

- 1/2 Tbsp gochujang (Korean chili paste)
- 1 tsp perilla oil
- 1/3 Tbsp sugar

Cooking Instructions
Step 1
First, prepare the ingredients for your fried rice. Finely chop the green onion. Prepare one egg for frying. For the radish kimchi, drain off some of the excess liquid and chop it into bite-sized pieces. If the pieces are too large, it can be a bit awkward to eat.
Step 2
It’s best to use radish kimchi that is well-fermented and has a nice sourness, rather than kimchi that is too fresh, as it will complement the fried rice better. If your radish kimchi pieces are quite large, chopping them smaller will make them easier to eat with the rice.
Step 3
Heat a pan over medium heat and add a little cooking oil. Add the chopped green onions and stir-fry until fragrant. This step creates ‘scallion oil,’ which greatly enhances the flavor of the fried rice. Once the scallions are fragrant, add the chopped radish kimchi and 1/3 Tbsp sugar. Stir-fry them together. After stir-frying the kimchi briefly, add 3 Tbsp of water, cover the pan, and reduce the heat to low. Let it simmer for about 2-3 minutes until the radish kimchi softens slightly. This process helps to wilt the kimchi and meld the flavors. Next, add 1/2 Tbsp of gochujang and mix well.

Once the gochujang is added, stir everything thoroughly to ensure all ingredients are evenly combined. Be careful not to let the kimchi mixture stick to the bottom of the pan as you stir-fry.

Now, add 1 bowl of warm cooked rice to the pan. Use a spatula to break up any clumps of rice and stir-fry until the rice is fluffy and separate (gonsol-gonsol). It’s important to mix well so that the rice doesn’t clump together. Once the rice is sufficiently fried and fluffy, drizzle in 1 tsp of perilla oil for added aroma and flavor, then give it a final quick toss to finish. For an extra touch, top the fried rice with a sunny-side-up fried egg. Your delicious and visually appealing radish kimchi fried rice is now complete!
