While delicious on their own, a little seasoning transforms them into an exceptional side dish that pairs wonderfully with any meal. This radish pickle salad is especially delightful with rice; when your appetite is low, a bowl of hot rice topped with this salad is pure comfort. Ingredients- 500g crispy radish pickles (or thinly sliced regular radish pickles)
- 5 stalks scallions
- 2 Tbsp sugar
- 1 Tbsp sesame oil (or to taste)
- 1 Tbsp vinegar
- 1 Tbsp minced garlic
- 3 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
Cooking Instructions
Step 1
If using pre-packaged crispy radish pickles, drain them thoroughly to remove excess water. If you are using whole radish pickles, slice them to about 0.5cm thickness, then cut into quarters to create fan shapes. This helps the seasoning penetrate evenly.

Wash the scallions and finely chop them into approximately 1cm pieces. The fresh oniony aroma of the scallions will complement the tangy flavor of the radish pickles, adding depth.

Now, transfer all the prepared radish pickles into a large, deep bowl.

Add the seasoning ingredients. Include 2 tablespoons of sugar to balance the tanginess, 1 tablespoon of sesame oil for aroma, 1 tablespoon of vinegar for brightness, and 1 tablespoon of minced garlic for a pungent kick. Finally, add all the chopped scallions.

For a spicy kick, add gochugaru according to your preference. I personally enjoy a bit of heat, so I added 3 tablespoons! Feel free to add more if you like it spicier.
