First, prepare 5 pieces of Oi-jji. Since store-bought Oi-jji is already salted, rinse them under running water several times to lightly remove some of the saltiness. Be careful not to squeeze them too hard, as this can make them mushy. Slice the rinsed Oi-jji as thinly as possible, about 0.5 cm thick, into bite-sized pieces. Thin slices allow the seasoning to penetrate better for a more delicious result.
Step 3
Place the sliced Oi-jji onto a clean kitchen towel or cheesecloth. Gently press down with your hands to squeeze out as much moisture as possible. This step is crucial for achieving the crunchy texture of the Oi-jji Muchim, so ensure you remove the liquid thoroughly.

Add all the seasoning ingredients to the squeezed Oi-jji in a mixing bowl. Include the finely chopped green onions (or the white part of the leek), gochugaru (chili flakes), maesil cheong (plum extract), sesame oil, and toasted sesame seeds.
