Easy 5-Minute Cucumber Salad: The Golden Recipe for Delicious Side Dish
Whip up a quick and tasty side dish with cucumbers from your fridge! This is my go-to cucumber salad recipe, and it’s incredibly delicious even with just cucumbers. Its refreshing, sweet, and tangy flavor profile is so addictive it’ll have you finishing a whole bowl of rice! The recipe is simple, so follow along carefully!
Main Ingredients- 2 Cucumbers
- 1 Onion
Seasoning- 1 tsp Salt
- 1 tsp Sugar
- 1 to 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- Sesame seeds, to taste (approx. 1 Tbsp)

Cooking Instructions
Step 1
First, prepare 2 cucumbers and 1 onion. Adding onion to cucumber salad brings a wonderful crunch and sweetness, making it even more delicious. I tend to use a generous amount of onion.
Step 2
Wash the cucumbers thoroughly under running water. You can either gently tear them with your hands or slice them into about 0.5cm to 1cm thickness. Slicing them too thinly might make them mushy, so aim for a moderate thickness.
Step 3
Peel and wash the onion, then cut it in half and slice it into 6 wedges. Instead of thinly slicing it into shreds, cutting it slightly thicker will give it a better bite.
Step 4
Place all the prepared cucumbers into a large bowl. While salting and draining cucumbers can enhance their crispiness, the golden recipe I’m sharing today involves mixing them fresh! Personally, I find this method much fresher and tastier than the pre-salted method!
Step 5
Now, add the prepared onion to the bowl with the cucumbers.
Step 6
We’ll add the seasoning ingredients directly to the bowl with the cucumbers and onions. Add 1 tsp salt, 1 tsp sugar, 1 to 1.5 Tbsp gochugaru, 1 Tbsp soy sauce, and 1 Tbsp sesame oil. Finally, sprinkle a good amount of sesame seeds for extra flavor. (Tip: For a more intense nutty flavor, consider adding the sesame seeds at the very end after mixing!)
Step 7
Now, gently mix everything with your fingertips. It’s important not to press down too hard, as this can crush the cucumbers. Mix softly to combine all the ingredients. That’s it! Your delicious cucumber salad is ready to be made.
Step 8
Transfer the well-mixed cucumber salad into a nice serving container. (Tip: I forgot to add sesame seeds initially, so I sprinkled them on top in the container and mixed again!) Enjoy your meal with this crisp and flavorful cucumber salad!
