This recipe uses brown rice-infused rice paper and seasoned with curry powder. For a healthier sweet alternative, you can substitute the sugar with natural unrefined cane sugar, which also yields a delicious result.
Ingredients- 2 sheets of rice paper
- 2 Tbsp curry powder
- 2 tsp sugar (or natural unrefined cane sugar)
- 2 cups cooking oil (for frying)

Step 1
Prepare the rice paper. Cut each sheet into 4 equal pieces. Since these will be fried quickly to maintain the right oil temperature, you can break them into bite-sized pieces after frying if preferred. Aim for a moderate frying temperature to avoid burning. Cut each rice paper sheet into 4 pieces.
Step 2
Heat the cooking oil over medium-low heat. It’s crucial that the oil isn’t too hot. When you drop a piece of rice paper, it should puff up and turn white almost immediately. If the oil is too hot, it will burn quickly. Fry the pieces until they puff up and turn white, then remove them promptly. You can fry them slightly larger and then break them into smaller, snackable pieces by hand after frying.
Step 3
Place the fried rice paper pieces on paper towels or parchment paper to drain any excess oil. This step ensures they remain extra crispy.
Step 4
Now for the seasoning! Place the fried rice paper into a resealable plastic bag. Add 2 tablespoons of curry powder and 2 teaspoons of sugar (or unrefined cane sugar). For an initial taste, you can start with half the amounts (1 Tbsp curry powder, 1 tsp sugar) and then add more in the same ratio if needed. The sugar doesn’t stick excessively, so it’s manageable. Using unrefined cane sugar offers a wonderfully rich flavor.
Step 5
For an extra touch of visual appeal, sprinkle some dried parsley on top (optional). These crispy rice paper snacks are best enjoyed immediately after they are made, as they can become soggy over time. Enjoy your delicious, sweet, and savory crunchy treat!
