Ingredients- 2 medium potatoes
- Pinch of salt
- 20 Vienna sausages
- Vegetable oil (or olive oil) for brushing
Cooking Instructions
Step 1
First, peel the potatoes. Using a mandoline slicer or a grater, slice the potatoes as thinly as possible into julienne strips. The thinner the potato slices, the crispier they will become when cooked.

Rinse the julienned potatoes in cold water 2-3 times to remove excess starch. This prevents them from sticking together and helps achieve a crispier texture. (Gently rubbing them with your hands while rinsing is recommended.)

Sprinkle a pinch of salt over the rinsed potato strips and let them sit for about 5 minutes. This step draws out some of the moisture, contributing to a crispier result when fried or baked.

After salting, rinse the potato strips again with clean water to remove any excess salt. This prevents them from becoming too salty and helps prevent the edges from burning during cooking.

Lay the rinsed potato strips on kitchen towels or a clean cloth and pat them dry, removing as much moisture as possible. Excess water can prolong cooking time and reduce crispiness.

Gently pat the Vienna sausages dry. Then, carefully wrap the potato strips around each sausage. Ensure the potato wraps are secure, and then pierce through the sausage and potato with a skewer to hold them in place.

You can wrap two layers of potato for a fuller look, or just one for an even crispier bite. Feel free to adjust based on your preference.

Using a brush, generously coat the potato-wrapped sausages with vegetable oil or olive oil. Applying oil helps the potato strips turn golden brown and become delightfully crispy during the cooking process.

Place the sausage and potato skewers in a preheated air fryer set to 180°C (350°F) and cook for 10 minutes. Then, increase the temperature to 200°C (400°F) and cook for an additional 5 minutes. This will ensure the potato wraps are extra crispy.
