Ingredients- 1 fresh cucumber
- A small amount of green onion
- 2 Tbsp cooking oil

Cooking Instructions
Step 1
Wash 1 fresh cucumber thoroughly and slice it into bite-sized pieces, about 1 cm thick. Slicing them to a moderate thickness is recommended to prevent them from becoming mushy during sautéing.
Step 2
In a bowl, combine the sliced cucumbers with 3 tablespoons of salt. Gently mix them and let them salt for 20 minutes. The cucumbers will soften and release their moisture. This step helps to firm up the cucumbers, retaining their crispiness when cooked.

After salting, firmly squeeze out the excess water from the cucumbers. You can also drain them in a sieve. Heat 2 tablespoons of cooking oil in a pan over high heat, then add the squeezed cucumbers and sauté quickly.

Once the cucumbers become slightly translucent and start to wilt, add the chopped green onion and 1 tablespoon of minced garlic. Continue to sauté, stirring constantly to prevent burning. It’s important to sauté quickly over controlled heat.

Remove from heat when the cucumbers are cooked to your desired tenderness but not overly soft. Finally, add 1 tablespoon of sesame seeds and 1 tablespoon of sesame oil, and mix everything together. This delicious sautéed cucumber side dish is ready to be enjoyed warm or cooled.
