Making fried rice with blanched and stir-fried bean sprouts creates a delightful dish with a unique charm, distinct from traditional bean sprout rice. While I based this recipe on Baek Jong-won’s Sundubu Jjigae seasoning, adding bean sprouts to gochujang fried rice or soy sauce seasoned fried rice would also be delicious. This one-bowl meal is not only simple but also packed with flavor and nutrition, making it a satisfying option for any mealtime.

Be careful not to overcook them, as this will make them lose their crispiness. Once blanched, drain them in a colander without rinsing them under cold water to maintain their texture.

Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add finely chopped green onions and stir-fry until fragrant. Sautéing the green onions until they release their aroma will significantly enhance the flavor of the fried rice. For added nutrition and visual appeal, feel free to include other finely diced vegetables like carrots, bell peppers, or onions.

Add 2 bowls of warm cooked rice to the pan and stir-fry it with the green onions, breaking up any clumps with your spatula.
