Cooking Instructions

Step 1

Hello everyone! Today, we’re diving into a fantastic recipe using delicious potatoes, in season this July. We’ll be making Baek Jong-won’s famous potato pancake, known for its incredibly crispy exterior and tender interior – ‘Geot-ba-sok-chok’ as we say in Korean. It’s a simple yet impressive dish perfect for a snack or a late-night craving. Let’s get started!

Step 1

Step 2

First, peel the potatoes thoroughly. Then, julienne them into thin, uniform strips. Try to cut them as thinly as possible, as thicker pieces will take longer to cook. In a bowl, combine the julienned potatoes with 2 tablespoons of pancake mix, 3 finely chopped Cheongyang peppers (remove seeds if you prefer less heat, or omit entirely), 1 cup of water, and 1 teaspoon of salt. Mix everything well until there are no lumps. Using pancake mix helps the potato strips adhere better than using just potato starch alone, ensuring a crispier and tastier pancake.

Step 2

Step 3

Now, heat a generous amount of cooking oil in a pan over medium-low heat. Spoon the potato mixture into the pan, spreading it out into an even layer of moderate thickness. Let it cook until the bottom side is golden brown and the edges start to crisp up. Once the first side is beautifully browned, carefully flip the pancake and cook the other side until it’s equally golden and crispy. Feel free to add a little more oil during cooking if needed to maintain that delightful crispiness.

Step 3

Step 4

And there you have it – your delicious potato pancake, perfectly golden and crispy on both sides! It’s best enjoyed hot off the pan, while the steam is still rising. You can also serve it with a soy sauce-based dipping sauce for extra flavor. This satisfying pancake is perfect for the whole family to enjoy. Give it a try!
