Whip up a batch of this delightful stir-fried dried shrimp, a classic royal Korean dish boasting a rich flavor and satisfying crunch. It’s a perfect side dish for rice or a fantastic snack with drinks.
Main Ingredients- 50g Dried Small Shrimp (can also use other types of dried shrimp like those for broth)
Seasoning & Others- 1 tsp Toasted Sesame Seeds (for added nutty flavor)
- 1/2 tsp Soy Sauce (for umami)
- 1 Tbsp Sugar (for balanced sweetness)
- 1 tsp Corn Syrup or Oligosaccharide (for shine and texture)
- 2 Tbsp Water (to dilute the sauce)
- A little Cooking Oil (to coat the shrimp for a smoother texture)
- 1 tsp Toasted Sesame Seeds (for added nutty flavor)
- 1/2 tsp Soy Sauce (for umami)
- 1 Tbsp Sugar (for balanced sweetness)
- 1 tsp Corn Syrup or Oligosaccharide (for shine and texture)

Cooking Instructions
Step 1
First, prepare the dried small shrimp. Heat a dry pan over medium-high heat. Add the dried shrimp and stir continuously for about 2-3 minutes until they become crispy. This process helps to remove any fishy odor and enhances their nutty flavor.
Step 2
Once the shrimp are toasted and crispy, place them on a clean, dry kitchen towel and gently rub them together. This step effectively removes any hard shells or sharp bits, resulting in a more pleasant texture. After rubbing, lightly sift the shrimp through a sieve to remove any dust or small fragments.
Step 3
Now, prepare to coat the shrimp with the sauce. Lightly grease a clean pan with a small amount of cooking oil. Over low heat, stir-fry the de-shelled shrimp just until they are lightly coated with the oil. Remove the shrimp from the pan and set them aside. This coating helps the sauce adhere better and maintains the shrimp’s texture.
Step 4
In the same pan, combine 1/2 tsp soy sauce, 1 Tbsp sugar, 1 tsp corn syrup, and 2 Tbsp water. Bring the mixture to a simmer over medium heat. When it starts to bubble, resist the urge to turn off the heat immediately. Let it simmer for about 30 seconds to 1 minute, or until the sauce thickens slightly – it should neither be too watery nor too sticky. You can test the consistency by drizzling it from a spoon. Cooking it too long can make the shrimp tough. Once the sauce reaches the desired consistency, turn off the heat and quickly add the prepared dried shrimp, tossing them thoroughly to ensure they are evenly coated with the sauce.

Finally, sprinkle 1 tsp of toasted sesame seeds over the stir-fried shrimp and mix well. Your delicious stir-fried dried shrimp is now ready! It’s wonderful served over warm rice or as a delightful accompaniment to a cold beverage.
