  • 100g fresh scallions
  • 1 Tbsp minced garlic
  • 1 pinch of salt
  • 1 Tbsp honey
  • 2 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil

Wash the fresh scallions thoroughly and pat them dry. Trim them to about 5-7 cm in length, then thinly julienne them. Cutting them too thick will prevent the seasoning from penetrating well, while cutting them too thin will reduce their crispiness, so it’s important to aim for a moderate thickness.

Immediately place the julienned scallions in prepared cold water. Soaking them in cold water helps to gently moderate the characteristic pungent and spicy flavor of scallions, maintain their vibrant green color, and enhance their crisp texture.

After soaking in cold water for about 5 minutes, drain the scallion juliennes in a colander. You can gently press them with your hands to remove excess water, but be careful not to squeeze too hard, as this can crush the scallions. Transfer the drained scallions to the bowl where you’ll mix the seasoning.

Add 1 Tbsp of minced garlic and a pinch of salt to the drained scallions in the bowl for seasoning. Then, add 1 Tbsp of honey for sweetness, 2 Tbsp of red pepper flakes (gochugaru) for spiciness, 1 Tbsp of vinegar for a tangy flavor, 1 Tbsp of soy sauce for umami, and finally, 1 Tbsp of sesame oil for richness. Gently toss everything together to ensure the seasoning is evenly distributed. Avoid mixing too vigorously, as this can make the scallions mushy; a gentle mix is key!
