- 1 fresh cucumber
- 1 handful of sea purslane (approx. 50g)

- 1 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (or crushed)

Cooking Instructions
Step 1
Gently rinse the sea purslane under running water. For an extra thorough clean, you can soak it briefly in water with a couple of drops of vinegar.

Drain the rinsed sea purslane thoroughly. Cut it into bite-sized pieces, about 3-4 cm in length. Avoid cutting it too short, as this can affect the texture.

Wash the cucumber well. Trim off both ends. You can peel it lightly with a vegetable peeler or a grater, or leave some peel on if you prefer. Cut the cucumber in half lengthwise.

Slice the halved cucumber about 0.5 cm thick. You can cut it into half-moons or lengthwise strips, whichever you prefer. Ensure the slices are relatively uniform in thickness.

In a mixing bowl, combine the prepared cucumber and sea purslane. Add the gochugaru, minced garlic, toasted sesame seeds, sesame oil, and soy sauce for the seasoning.

Gently toss the ingredients to coat them evenly with the seasoning. Be careful not to overmix, as this can make the cucumber mushy. Taste and adjust with a little more soy sauce if needed.
