- Salt 1 pinch (adjust to your taste)

Cooking Instructions
Step 1
First, trim the sea purslane and wash it thoroughly. Bring a pot of water to a boil with a pinch of coarse salt. Quickly blanch the sea purslane by dipping it in and immediately removing it – think of it as just passing through the boiling water. Blanching for about 10 seconds maximum will help preserve its crisp texture.
Step 2
Immediately rinse the blanched sea purslane under cold running water to cool it down rapidly. Gently rinse it a couple of times, then lightly press it with your hands to remove excess water. Cut it into bite-sized pieces and set aside.
Step 3
Place the prepared sea purslane in a mixing bowl. Add all the seasoning ingredients: 1 Tbsp homemade miso paste, 1/3 Tbsp gochujang, 1 pinch of salt, 1/3 Tbsp sesame seeds, and 1 tsp sesame oil.
Step 4
If you enjoy minced garlic, you can add a little at this stage according to your preference. For those who like it spicier, adding finely chopped chili peppers would also complement the dish well.
Step 5
Gently mix everything together with your hands, ensuring the dressing coats the sea purslane evenly. Be careful not to over-mix, as this can make the sea purslane mushy. Your delicious and healthy Sea Purslane Miso Salad is now complete!
