  • 1/4 head well-fermented kimchi (or 200g)

Seasoning for Bean Sprouts

  • 2 Tbsp minced green onion
  • 1/2 Tbsp minced garlic
  • 1 Tbsp soy sauce (or regular soy sauce)
  • Pinch of salt (adjust to taste)
  • 1 Tbsp sesame oil
  • 1 tsp sesame seeds

First, we’ll prepare the bean sprouts. Remove any dirt from the roots and rinse them thoroughly under running water.

Place the cleaned bean sprouts in a pot, spreading them out evenly without overlapping. Add 1/2 cup of water and 1/3 tsp of salt to the pot. Boiling them in saltwater helps eliminate any beany odor and makes them extra crisp.

Cover the pot with a lid and boil over high heat for 4 to 5 minutes. It’s important to time this correctly as overcooked bean sprouts can become mushy. Once cooked, immediately rinse them under cold water to cool them down. Drain them completely in a colander to prevent them from becoming soggy.

Prepare the minced green onion and garlic for the bean sprout salad. Finely chop the green onion and mince the garlic for better flavor distribution.

Add the prepared minced green onion, minced garlic, soy sauce, salt, sesame oil, and sesame seeds to the drained bean sprouts. Gently mix them together with your hands, like ‘jo-mul jo-mul,’ ensuring the seasoning is evenly distributed. Be careful not to mix too vigorously, as this can mash the bean sprouts.
