- 0.5 Tbsp tuna extract (or soy sauce for soup)
- 1 Tbsp sesame oil
- 1 Tbsp perilla oil (for rich flavor)
- 1 Tbsp sesame seeds (lightly crushed)
- Salt to taste
Cooking Instructions
Step 1
We start with 250g of fresh bean sprouts, the star of our dish. Choose sprouts that are clean and firm for the best crunch.
Step 2
Rinse the bean sprouts by gently swirling them in cold water. This removes any dirt or debris while preserving their crispiness. After rinsing, place them in a colander to drain thoroughly. Ensuring they are well-drained is key.
Step 3
Bring 1.5 liters of water to a rolling boil in a pot over high heat. Once boiling, add 1 tablespoon of salt. Carefully add the drained bean sprouts to the boiling water. Stir them gently just once, then immediately turn off the heat. Avoid overcooking, as this will make the sprouts limp.
Step 4
Quickly drain the blanched bean sprouts into the colander. Rinse them briefly under cold running water to stop the cooking process and cool them down. Shake off any excess water. Removing all moisture is crucial for the final taste and texture.
Step 5
Transfer the well-drained bean sprouts to a mixing bowl. Add the finely chopped green onions (0.5 Tbsp), minced garlic (1 tsp), tuna extract (0.5 Tbsp), perilla oil (1 Tbsp), sesame oil (1 Tbsp), and lightly crushed sesame seeds (1 Tbsp).
Step 6
For a richer nutty flavor, it’s best to lightly crush the sesame seeds before adding them, rather than using them whole. This releases their aromatic oils.
Step 7
Gently toss and mix everything together with your hands until the seasoning is evenly distributed. Be tender to maintain the sprouts’ crispiness. Take a small bite to check the seasoning.
Step 8
Adjust the seasoning as needed, primarily with salt. I found that adding about 0.5 teaspoon of salt gave it a perfectly balanced flavor. Feel free to add more or less to suit your preference.
Step 9
Congratulations! Your wonderfully crispy seasoned bean sprouts are ready to enjoy. Made with fresh ingredients and a touch of care, this dish is perfect for any meal.
