Main Ingredients
- 250g fresh mung bean sprouts
- 30g red bell pepper (about 1/4 of a pepper), julienned
Blanching Sprouts
- 0.5 Tbsp coarse salt
- 1/2 cup (100ml) water
Seasoning
- 0.5 Tbsp minced garlic
- 0.5 Tbsp plum extract (or other sweetener, adjust to taste)
- 1 Tbsp perilla oil (deulgireum)
- 0.5 Tbsp sesame seeds (or ground sesame seeds)
- 2 pinches of fine salt (adjust to taste)
- 0.5 Tbsp coarse salt
- 1/2 cup (100ml) water
Seasoning

- 0.5 Tbsp sesame seeds (or ground sesame seeds)

Cooking Instructions
Step 1
First, prepare all the ingredients for the recipe. Rinse the mung bean sprouts under running water and prepare the red bell pepper by removing the stem and seeds.
Step 2
Julienne the red bell pepper into thin strips. This will add color and a crunchy texture to your salad.
Step 3
Gently rinse the mung bean sprouts a couple of times in cold water to remove any debris. Lightly drain them on a colander. Avoid over-washing, as this can make them mushy.
Step 4
In a pot, bring 1/2 cup of water and 0.5 Tbsp of coarse salt to a boil over high heat. Once boiling, add the mung bean sprouts and cover the pot. Blanch them very briefly, for just about 30 seconds to 1 minute. This short blanching time is key to maintaining their crispness.
Step 5
Immediately drain the blanched sprouts and rinse them under cold running water to stop the cooking process and cool them down. Then, drain them thoroughly in a colander, pressing gently with your hands to remove as much excess water as possible. Excess water can dilute the flavors of the salad.
Step 6
Transfer the well-drained mung bean sprouts and the julienned red bell pepper into a mixing bowl. The combination of colors will make the dish visually appealing.
Step 7
Add the seasoning ingredients: 0.5 Tbsp minced garlic, 0.5 Tbsp plum extract, 1 Tbsp perilla oil, 0.5 Tbsp sesame seeds, and 2 pinches of fine salt. If you don’t have plum extract, you can use sugar, adjusting the sweetness to your preference.
Step 8
Gently mix all the ingredients together with your hands until well combined. Be careful not to over-mix or mash the sprouts. Taste and add a little more salt if needed. Your delicious seasoned mung bean sprout salad is now ready to serve!
