Main Ingredients- 1 bunch Garlic Scapes (approx. 200-250g)
- 1 handful Dried Shrimp (approx. 30-40g)
- 1 Tbsp Cooking Oil or Olive Oil

Prepare the fresh garlic scapes. If the outer leaves are wilted or dirty from market purchase, trim them lightly.
Step 2
Cut the garlic scapes into bite-sized pieces, about 4-5cm long. They can be difficult to handle or eat if they are too long.

Rinse the prepared garlic scapes thoroughly under running water. After washing, drain them well in a colander. This helps prevent oil splattering during cooking and ensures a crispier texture.

Heat a pan over medium heat, add 1 Tbsp of cooking oil, then add the prepared garlic scapes and 2 Tbsp of soy sauce. Stir-fry them together. Adding the soy sauce first allows the garlic scapes to absorb the seasoning.
