  • 1 bunch fresh wild chives (about 100g)
  • 10 shrimp (peeled and deveined)
  • 2 Tbsp tempura flour
  • 6 Tbsp pancake mix
  • 150ml water

First, prepare the wild chives. Wash them thoroughly under running water, removing any yellowed or wilted leaves. Gently shake off excess water. Then, gather 3-4 strands of chives together and roll them up tightly. This will help maintain their shape while cooking.

In a large bowl, combine the pancake mix (6 Tbsp) and tempura flour (2 Tbsp). A good ratio is 3 parts pancake mix to 1 part tempura flour for a nice crispiness. Gradually pour in the water (150ml), whisking with chopsticks or a whisk until a smooth batter forms. Avoid overmixing; a few small lumps are perfectly fine and can contribute to a crispier texture.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, carefully place the rolled wild chives onto the pan. Ensure they don’t stick.
