First, rinse the chicken wings thoroughly under cold running water several times. Then, to help tenderize the meat and remove any gamey smell, soak them in milk for at least 10 minutes. (If you don’t have milk, you can skip this step or soak them in rice water.) After soaking, drain the milk and pat the chicken wings completely dry with paper towels.

Place the dried chicken wings in a mixing bowl. Add all the glaze ingredients: 2 tablespoons of soy sauce, 1 tablespoon of cooking oil, 1 teaspoon of sugar, 1 tablespoon of cooking wine (or Mirin), a pinch of black pepper, a pinch of ginger powder, and 1 teaspoon of minced garlic. Gently massage the marinade into the wings, ensuring they are evenly coated. Let them marinate for 5-10 minutes in the refrigerator for the flavors to meld. If you prefer them extra crispy, you can add an extra 1-2 minutes. After the initial 10 minutes, carefully flip the wings and cook for the remaining 10 minutes.
