Cooking Instructions

Step 1

Hello everyone! Following up on the curry-flavored chicken skin recipe I shared previously, today I’m bringing you the much-loved ‘Soy Sauce Chicken Skin’ recipe. If you’re curious about the curry version, I’ll leave a link at the bottom of this post. 🙂

Step 1

Step 2

First, rinse the chicken skin thoroughly under cold running water. This initial wash helps to remove any surface impurities.

Step 2

Step 3

Add a generous amount of all-purpose flour to the rinsed chicken skin. Knead it vigorously with your hands until the chicken skin is well coated and appears opaque. This step is crucial for removing any slimy residue and ensuring a crispier texture when fried.

Step 3

Step 4

Rinse the flour-coated chicken skin under clean water multiple times until all the flour and any remaining impurities are washed away. Continue rinsing until the water runs clear.

Step 4

Step 5

Now, let’s remove any gamey odor. Submerge the chicken skin in a mixture of milk and water, ensuring it’s fully covered. Let it soak for about 30 minutes to an hour. Milk is excellent for tenderizing and neutralizing strong flavors.

Step 5

Step 6

After soaking in milk, rinse the chicken skin again under clean running water. Make sure to wash away any milky residue until the skin feels smooth.

Step 6

Step 7

For the final odor removal step, bring a pot of water to a boil and add 1/2 cup of Soju (or your preferred clear liquor). Carefully add the chicken skin and blanch for about 1-2 minutes. This quick boiling process effectively eliminates any remaining unwanted smells and contributes to a chewier texture.

Step 7

Step 8

Immediately transfer the blanched chicken skin to a bowl of ice-cold water to stop the cooking process and cool it down. Then, drain it thoroughly in a colander. Ensuring the skin is well-drained is key to achieving crispiness and preventing splattering during air frying.

Step 8

Step 9

Time to make the delicious soy sauce glaze! In a bowl, combine about 2 handfuls of chicken skin (approx. 1kg), 3 Tbsp soy sauce, 0.5 Tbsp sugar, 1 Tbsp corn syrup (or oligosaccharide), and a pinch of black pepper. Mix well. For a touch of heat, you can add finely chopped chili peppers to your preference.

Step 9

Step 10

Add the well-drained chicken skin to the prepared glaze. Gently toss and massage the chicken skin to ensure every piece is evenly coated with the sauce. Marinating allows the flavors to penetrate deeply. Refrigerate for at least 1 hour, or even longer for a more intense flavor.

Step 10

Step 11

Now, let’s use the air fryer! Arrange the marinated chicken skin in a single layer in the air fryer basket, avoiding overcrowding. Air fry at 180°C (350°F) for 5 minutes. Flip the pieces and air fry for another 5 minutes at 180°C (350°F). For extra crispiness, you can add an additional 3-5 minutes at 180°C (350°F), adjusting based on your desired texture and your air fryer model.

Step 11

Step 12

Important Tip: Don’t eat the chicken skin immediately after air frying! Let it cool down for a bit. This resting period allows the moisture to redistribute, resulting in a significantly crispier and more enjoyable texture. Patience here is rewarded!
