Main Ingredients

  • 1/2 to 1 can Spam (approx. 150g – 300g)
  • 1 block Tofu (approx. 300g)
  • Vegetable oil, for frying
  • Salt, to taste
  • 4 sheets Gim (roasted seaweed for kimbap)

Rice Seasoning

  • 1.5 bowls cooked rice (warm)
  • 1/3 tsp Salt
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

Step 1

Cut the tofu and Spam into long, stick-like shapes suitable for kimbap. Aim for about 1cm thickness for the tofu, and similar thickness for the Spam.

Lightly season the cut tofu with 2-3 pinches of salt. This step helps to draw out excess moisture, making the tofu firmer and preventing it from breaking apart during frying or cooking.

Heat a generous amount of vegetable oil in a pan over medium-low heat. Place the seasoned tofu in the pan and fry until golden brown and slightly crispy on both sides. The key is to cook it slowly until the exterior is crisp and the interior remains soft.

While the tofu is cooking, fry the Spam in the same or a separate pan until golden brown. The deliciousness of the tofu combined with the saltiness of the Spam creates a fantastic flavor. Be mindful of the heat as Spam can burn easily.

In a bowl, combine 1.5 bowls of warm cooked rice with 1/3 tsp of salt, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Mix well to create flavorful seasoned rice, with a delightful aroma of sesame oil.

Lay a sheet of kimbap gim on a flat surface. Spread the seasoned rice thinly over the gim. Generously place the golden-brown fried Spam and tofu on top of the rice, according to your preference. Don’t be shy with the fillings – more ingredients mean a more satisfying kimbap!

Starting from the bottom edge of the gim, roll the kimbap tightly, enclosing the fillings. Moisten the edge of the gim with a little water or a few grains of rice to seal the roll. Slice the kimbap into even pieces to complete your delicious Spam and Tofu Kimbap. For an extra sheen, you can brush a little sesame oil on the cut surfaces.
