Step 1
Let’s make delicious pancakes using leftover chives and zucchini from home. Chives tend to wilt quickly, so it’s best to use them immediately in salads or pancakes.
Step 2
Prepare about 80g of chives. Since they will be blended, cut them into manageable pieces, about 3-4 cm long. This will help them blend much more smoothly.
Step 3
Place the chopped chives into a blender, add 2/3 cup of water, and blend until smooth. To retain the chives’ vibrant green color, avoid adding too much water. Pour the blended chive water into a bowl and admire its beautiful green hue for a moment.
Step 4
Looking at the green chive water in the bowl already makes your mouth water, doesn’t it? Now, let’s prepare the other vegetables.
Step 5
Prepare 1/2 zucchini and 1/2 onion. Thinly julienne both. The thickness of the julienned vegetables should not be too thick to ensure a pleasant texture in the pancake. If you want to add more color, you can add some thinly sliced red chili peppers, or if you prefer a spicy taste, adding minced Cheongyang chili peppers will make it incredibly delicious.
Step 6
Now, to the bowl with the blended chive water, add 10 heaped tablespoons of pancake mix. Make sure to heap the tablespoons generously. This will result in crispy and delicious pancakes.
Step 7
Adding chewy squid greatly enhances the flavor. Use half a squid, preparing the tentacles and body. (You can use the remaining body for other dishes.) If you add the whole squid, you’ll have an even more abundant squid and chive pancake.

Add the prepared julienned zucchini, onion, and chopped squid to the batter. Also, add a pinch of salt for seasoning. Be careful not to add too much, as it might become too salty; it’s best to taste and adjust.

Finally, add 1 Tbsp of mirin (rice wine) and mix the batter well. Mirin helps to remove the fishy smell of the squid and mellows the raw chive flavor, enhancing the overall taste of the pancake. Once all ingredients are mixed, your delicious squid and chive pancake batter is ready.
Step 10
