Thoroughly rinse the aged kimchi under running water to remove excess seasoning. This step reduces the saltiness and spiciness, making it more palatable for everyone, and helps preserve its crisp texture.

Finely chop the rinsed kimchi into bite-sized pieces, about 1cm wide. If the kimchi leaves are large, you can make a few vertical cuts to ensure the seasoning penetrates well and the kimchi becomes tender when cooked.

Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the chopped kimchi and stir-fry for about 1 minute. The goal is to evaporate some of the moisture to maintain a satisfying crunch.
