Main Ingredients
  • 250g Pork Shoulder, sliced into bite-sized pieces
  • 1/2 stalk Green Onion
  • 1/4 Carrot
  • 1/2 Onion
  • 1 Green Chili Pepper (optional)

Marinade Ingredients
  • 2 Tbsp Soy Sauce
  • 1/2 Tbsp Oyster Sauce
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Cooking Wine (Mirin or similar)
  • Pinch of Black Pepper
  • 1/2 Tbsp Toasted Sesame Seeds
  • 1/2 Tbsp Sesame Oil

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the green onion diagonally, focusing on the thicker parts for a substantial cut. Slice the green chili pepper diagonally as well to add a spicy aroma (you can omit this if you prefer less heat). Thinly julienne the carrot and onion. Cutting them into similar thicknesses will ensure even cooking.

Step 2

It’s convenient to ask your butcher to slice the pork shoulder into bite-sized pieces. Place all the sliced pork into a pan. Add the marinade ingredients: 2 Tbsp soy sauce, 1/2 Tbsp oyster sauce, 2 Tbsp cooking wine, 1 Tbsp minced garlic, a pinch of black pepper, 1 Tbsp brown sugar, and 1 Tbsp plum extract.

Step 3

Gently massage and mix the marinade into the pork with your hands, ensuring it coats the meat evenly. Let it marinate for about 5-10 minutes for the best flavor infusion.

Step 4

Now, add the prepared vegetables (green onion, carrot, onion, green chili pepper) to the marinated pork and toss them together lightly. The vegetables will release some moisture, helping to mellow the marinade.

Step 5

Heat a pan over medium-high heat. Add the marinated pork and vegetables. Stir and toss with a spatula to prevent sticking, cooking until the pork is mostly done. You can adjust the heat as needed during cooking.

Step 6

When the pork is almost fully cooked, stir in 1/2 Tbsp sesame oil and 1/2 Tbsp toasted sesame seeds for a rich, nutty aroma. Lower the heat slightly at this stage to prevent the marinade from burning.

Step 7

Finally, turn the heat up to high. Stir-fry quickly, aiming to evaporate any remaining moisture in the pan. This high-heat, quick stir-fry will give the pork a wonderfully crispy texture and enhance its flavor. It’s delicious served over a bowl of rice!
