Step 1
Wash the 2 potatoes (about 350g) thoroughly, peel them, and then thinly julienne them into about 0.3cm thick strips. Cutting the potatoes too thick will make them take longer to cook and easier to break apart during stir-frying, so thin slicing is key. To make it visually appealing, prepare a small amount of carrot as well, julienning it to a similar thickness. (You can use the carrot for garnish or add it along with the potatoes when stir-frying.)
Step 2
Rinse the julienned potatoes in cold water 3-4 times to remove excess starch. This step is crucial to prevent the potato shreds from sticking together and ensures a cleaner texture when cooked. After rinsing, soak the potatoes in water for about 1 minute to enhance their crispiness.
Step 3
Drain the potatoes completely in a colander after soaking them in water. Excess moisture can cause oil splatters during cooking and make the potatoes soggy. Gently pressing them with paper towels to remove moisture is also a good option.
Step 4
Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the drained julienned potatoes and stir-fry. After about 5 minutes of stir-frying, season with 0.2 tablespoons of salt. Once the potatoes start to soften slightly, add 1 tablespoon of cooking wine to eliminate any raw smell and add a nice sheen. Finally, add the julienned carrots and stir everything together evenly for another 1-2 minutes to finish. When stir-frying shredded potatoes, maintain a consistent pan temperature and stir continuously to ensure even cooking without burning. Using a non-stick pan will help prevent sticking.
