Prepare the Ingredients: Gather fresh water spinach and fragrant red chili peppers.

About Water Spinach: Water spinach is characterized by its hollow, bamboo-like stems. It’s a fascinating vegetable known for its unique texture.

Water Spinach Leaves: The leaves have a shape similar to the stems and are delicious when stir-fried together.

Chop the Vegetables: Remove the seeds from the red chili peppers and thinly slice them. Wash the water spinach thoroughly and cut it into 6-7 cm lengths. It’s a good idea to separate the stem and leaf parts. The stems take longer to cook than the leaves, so stir-frying them separately helps maintain their crispness.
Step 5
Sauté Garlic and Chilies: Lightly oil a pan and sauté the minced garlic and sliced red chilies over medium-low heat until fragrant. Be careful not to burn the garlic.

Stir-fry Stems First: Once the garlic is fragrant, add the water spinach stems to the pan and stir-fry quickly over high heat. Stir-frying over high heat prevents the vegetables from becoming soggy and helps retain their crisp texture.

Add Seasonings and Stir-fry: When the stems are slightly cooked and glossy, add the leaves along with sugar, fish sauce, oyster sauce, and doubanjiang. Stir-fry rapidly over high heat. Adjust the amount of doubanjiang and oyster sauce to your taste, as too much can make it too salty.
