Chop the Vegetables: Remove the seeds from the red chili peppers and thinly slice them. Wash the water spinach thoroughly and cut it into 6-7 cm lengths. It’s a good idea to separate the stem and leaf parts. The stems take longer to cook than the leaves, so stir-frying them separately helps maintain their crispness.

Sauté Garlic and Chilies: Lightly oil a pan and sauté the minced garlic and sliced red chilies over medium-low heat until fragrant. Be careful not to burn the garlic.
