Main Ingredients

  • 3 handfuls of sweet potato stems (approx. 300g)
  • 1 red chili pepper

Cooking Instructions

Step 1

First, prepare 3 handfuls of sweet potato stems. To make them more tender, gently scrape off the outer skin of the thicker stems with a knife or peel it with your fingers. Wash the peeled stems thoroughly under running water. Bring a pot of water to a boil, add 1 tablespoon of salt, and then add the prepared sweet potato stems. Blanch for about 3 minutes, just until they are tender-crisp. Be careful not to overcook, as they can become mushy.

Step 1

Step 2

Once blanched, immediately drain the sweet potato stems and rinse them under cold running water to cool them down. This step helps to maintain their crisp texture.

Step 2

Step 3

Gently squeeze out excess water from the rinsed stems. Then, cut them into bite-sized pieces, about 5-7 cm long. Cutting them into manageable lengths will make stir-frying easier.

Step 3

Step 4

Finely mince 1 red chili pepper, removing the seeds beforehand. Adding chili adds a lovely color and a hint of spiciness, enhancing the overall flavor.

Step 4

Step 5

Heat a lightly oiled pan over medium heat. Add the prepared sweet potato stems. Season with 1 teaspoon of salt and stir-fry lightly to combine the salt with the stems.

Step 5

Step 6

As the sweet potato stems begin to cook, add 1 tablespoon of minced garlic and 1.5 tablespoons of anchovy sauce. Continue to stir-fry together. The anchovy sauce will add a rich umami flavor, and stir-frying allows the garlic aroma to meld beautifully with the stems. Cook until the sweet potato stems reach your desired tenderness.

Step 6

Step 7

Once the sweet potato stems are tender, add the minced red chili pepper. Stir-fry briefly, just until the chili is incorporated and the colors are well blended. Avoid overcooking the chili to preserve its crispness.

Step 7

Step 8

Finally, just before turning off the heat, sprinkle a generous amount of sesame seeds over the top for a nutty aroma. Your delicious stir-fried sweet potato stems are now ready! This dish is a wonderful accompaniment to rice and also makes a great addition to lunchboxes.
