First, prepare 3 handfuls of sweet potato stems. To make them more tender, gently scrape off the outer skin of the thicker stems with a knife or peel it with your fingers. Wash the peeled stems thoroughly under running water. Bring a pot of water to a boil, add 1 tablespoon of salt, and then add the prepared sweet potato stems. Blanch for about 3 minutes, just until they are tender-crisp. Be careful not to overcook, as they can become mushy.

Once blanched, immediately drain the sweet potato stems and rinse them under cold running water to cool them down. This step helps to maintain their crisp texture.

Gently squeeze out excess water from the rinsed stems. Then, cut them into bite-sized pieces, about 5-7 cm long. Cutting them into manageable lengths will make stir-frying easier.

Finely mince 1 red chili pepper, removing the seeds beforehand. Adding chili adds a lovely color and a hint of spiciness, enhancing the overall flavor.
