Step 1
Begin by preparing the sliced almonds. Heat a dry frying pan over low heat, ensuring no oil is added. Add the sliced almonds and toast them gently, stirring constantly. You’ll notice their nutty aroma intensifying as they turn slightly golden. Once fragrant and lightly toasted, remove them from the pan and let them cool. Toasting the almonds beforehand significantly enhances their flavor and creates a richer, nuttier taste in your tuiles.
Step 2
In a mixing bowl, combine the toasted sliced almonds, 1 tablespoon of flour, 3 tablespoons of milk, 50g of sugar, and 1 tablespoon of melted butter. Use a spatula or whisk to thoroughly mix all the ingredients until you achieve a smooth, uniform batter. Ensure there are no lumps. If the batter seems too thick, you can add a tiny bit more milk, a teaspoon at a time, until it reaches a spreadable consistency.
Step 3
Place a non-stick frying pan over very low heat. Using a ladle or spoon, scoop small portions of the batter onto the pan. Immediately after placing the batter, use the back of the spoon or a spatula to spread it as thinly and widely as possible. Spreading the batter thinly is key to achieving a crispy texture and ensuring they cook through quickly. Let one side cook until it’s lightly golden brown, then carefully flip the tuile with a spatula and cook the other side until it’s also golden brown. Keep the heat very low to prevent burning.
Step 4
The freshly baked almond tuiles will be soft and pliable right after coming out of the pan. Gently transfer them onto a wire cooling rack. As they cool on the rack, they will gradually firm up and become wonderfully crisp. Once completely cooled, arrange them on a plate and enjoy their delightful crunch.
