- Thinly sliced beef (for bulgogi) 50g
- Fresh oysters 70g
- Carrot, a small amount
- Red bell pepper, a small amount

- All-purpose flour, 5 Tbsp
- King oyster mushroom, 2/3
- Zucchini, a small amount
Sauce & Seasonings
- Minced garlic, 2 Tbsp
- Vinegar, 1.5 Tbsp
- Oligosaccharide (or corn syrup), 1.5 Tbsp
- Soy sauce, 2 Tbsp
- Water, a small amount
- Herb salt, a pinch (to taste)
- Sugar, 1/2 Tbsp
- Sesame oil, 1 Tbsp
- Minced garlic, 2 Tbsp
- Vinegar, 1.5 Tbsp
- Oligosaccharide (or corn syrup), 1.5 Tbsp
- Soy sauce, 2 Tbsp
- Water, a small amount
- Herb salt, a pinch (to taste)
- Sugar, 1/2 Tbsp
- Sesame oil, 1 Tbsp
Cooking Instructions
Step 1
Gently pat the thinly sliced beef dry with paper towels to remove excess moisture. Sprinkle herb salt and sugar evenly on both sides to season. (Optional: For enhanced flavor and to reduce any gamey taste, you can add 1 Tbsp of mirin or rice wine, though it’s not included in this specific recipe.) Chop all the vegetables into bite-sized pieces and set them aside. It’s best to cut the carrot, red onion, king oyster mushroom, and zucchini into similar sizes for even cooking.

Prepare the Gganpung sauce by combining the minced garlic, vinegar, oligosaccharide, soy sauce, sugar, and a small amount of water in a small bowl. Whisk until well blended. Finely chop the green chili pepper and set aside.

Heat a generous amount of cooking oil in a pan over medium-high heat. Add the seasoned beef to the center of the pan and cook. Arrange the chopped vegetables (carrot, red onion, king oyster mushroom, zucchini) around the beef. Sprinkle sea salt (or regular salt) evenly over the vegetables. Finally, dust all-purpose flour evenly over both the beef and vegetables, creating a light coating.

Turn the heat up to high and quickly stir-fry the beef and vegetables. The goal is to lightly fry the ingredients coated in flour until they are golden brown and slightly crispy.

Prepare the cleaned fresh oysters. Gently pat them dry with a paper towel to remove any excess moisture, which helps them crisp up better.

Create a space in the center of the pan with the cooked beef and vegetables. Add the prepared oysters to this space. Lightly dust the oysters with flour and add the finely chopped green chili pepper.

Pour the prepared Gganpung sauce evenly over all the ingredients in the pan. Continue to cook over high heat, stir-frying briskly for about 1-2 minutes, ensuring the sauce coats everything evenly. Be careful not to overcook the oysters, as they can become mushy.
