Main Ingredients
  • 10 fresh saury fish
  • 1/4 onion (small)
  • 30g carrot (approx. 1/5 of a carrot)
  • 3 cloves garlic
  • 1 egg
  • 1 Tbsp rice wine or cooking sake (can substitute ginger wine)
  • 3 Tbsp starch (cornstarch or potato starch)
  • Plenty of cooking oil for deep-frying
  • 1 Tbsp sesame oil
  • Pinch of black pepper

Sweet and Sour Sauce
  • 2 Tbsp soy sauce
  • 5 Tbsp water
  • 2 Tbsp vinegar
  • 2 Tbsp oligosaccharide or corn syrup
  • 0.5 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp oyster sauce

Cooking Instructions

Step 1

Prepare all the ingredients for your delicious Sweet and Sour Saury. Having your saury, vegetables, and sauce ingredients pre-measured will make the cooking process much smoother.

Step 2

Finely mince the onion and carrot after washing them thoroughly. Thinly slice the garlic. Mincing the vegetables finely helps them blend well with the sauce for a better flavor.

Step 3

Rinse the fresh saury under running water. Trim off the head and tail with scissors. Cut the saury into bite-sized pieces, about 2-3 cm long. Cutting them too small might cause them to break apart during frying, so aim for a moderate size.

Step 4

Sprinkle 1 Tbsp of rice wine (or cooking sake) over the prepared saury and let it marinate for a short while. This step helps to eliminate any fishy odor and enhances the flavor.

Step 5

In a bowl, combine the starch and egg white (discard the yolk). Gently mix to form a batter. Coating the saury evenly with a thin layer of this batter is crucial for achieving a crispy texture after frying. Using only egg white contributes to the crispiness.

Step 6

Heat a generous amount of cooking oil in a pot over medium heat. The oil is ready when small bubbles form around a wooden chopstick dipped into it. Carefully add the battered saury pieces one by one, ensuring they don’t clump together. Fry until golden brown and crispy.

Step 7

For an extra crispy and delicious result, try double-frying the saury. Fry them once until lightly golden, remove them to drain, then increase the oil temperature slightly and fry them again until perfectly crisp. This technique ensures a delightfully crunchy exterior and a moist interior. 💯

In a separate pan, heat a little oil over medium-low heat. Sauté the sliced garlic until fragrant. Once the garlic aroma is released, add the minced carrot and onion and stir-fry for about 2 minutes until slightly tender. Then, add all the pre-measured sauce ingredients (soy sauce, water, vinegar, oligosaccharide, gochugaru, and oyster sauce). Bring the sauce to a boil over high heat.

Step 9

Once the sauce is bubbling vigorously, add all the double-fried, crispy saury to the pan. From this point on, it’s important to work quickly.

Step 10

Keep the heat on high and quickly toss the fried saury to coat evenly with the sauce. Stir gently for 1-2 minutes, ensuring the sauce doesn’t burn. Finally, sprinkle with sesame seeds for added nutty flavor.

Step 11
